Copper River Salmon


So this morning a dear friend and I went to the Southside Farmers Market. Well in Alaska, we don't have a lot of veggies right now, only starts and flowers. We got some great fresh bread, and some cheese curd and  some COPPER RIVER SALMON! We went early so that we could get a good pick. usually this fish sells for a huge amount in restaurants.... about $30 or more a plate. We got ours for $6 a pound.

So to honor this first salmon to run our rivers... I cooked it with a dry rub called COHO MOJO. I got this spice from Summit Spices here in town. They are great! They will even make a special rub, spice or tea for you!

On one filet, I distributed 2 TBS of butter, sprinkle in the Coho Mojo cover with tinfoil and bake at 375 for 15-20 min. Don't over cook it!

Tomato bisque and Roasted Chicken

Well you know by now that I have been crock pot crazy. I have a busy schedule, but still want to put a good meal on the table for my family. Here is my latest creation.

3 Cups of Tomato Bisque Soup
1/2 cup Roasted Red Peppers
1 TBS red curry paste
1/2 cup milk (or heavy cream)
1 TBS fresh basil
2 Cups of chicken (fresh or frozen it does NOT need to be cut, only trimmed)

Dump it all in the crock pot. Stir every once in a while, at least every 2 hours. cook on low if you have 8 hours. Cook on high if you have 4 hours.

I served it with jasmine rice.... which I also cooked in my rice cooker on a delayed timer, fresh veggies and a salad.
